About the Job

Duke of Tokyo is an award-winning cocktail and private karaoke bar, where DJs come and create a vibrant and welcoming atmosphere during the weekends.

It's now time for us to take it to the next level: While we already offer a selection of Japanese-style snacks for both our karaoke and bar guests, we're ready to expand our kitchen and take our dining experience to the next level!

To kick-start this project, we need an ambitious and creative Head Chef who’s ready to take charge from day one. This isn’t just about stepping into an existing team - you’ll be part of the foundation, helping shape the entire kitchen, from the menu to the team culture.

You'll have creative freedom to develop a unique menu, source ingredients, and set up kitchen operations exactly how they should be. As we prepare to open our doors, you'll be involved in everything from hiring and training your own kitchen team to fine-tuning recipes and ensuring our workflow is seamless.

If you're passionate about food and flavors - especially Japanese cuisine - and excited by the idea of building something new, this is your chance to make your mark. You'll have a real say in how things are done and play a key role in creating a high-energy, welcoming atmosphere for both staff and guests.

Key Responsibilities

  • Develop the menu - create, test, and refine dishes that will define our kitchen.

  • Build and lead the kitchen team - hire, train, and manage your crew.

  • Set up operations - structure workflows, source ingredients, and create a smooth daily rhythm.

  • Maintain high standards - from prep to plating.

  • Keep control of costs - manage stock, budgets, and minimize waste.

  • Oversee kitchen maintenance - make sure equipment and systems stay in top shape.

  • Ensure food safety - maintain hygiene and health standards at all times.

About you

  • You’ve got 2+ years of experience in a kitchen leadership role.

  • You have hands-on experience with Japanese cuisine - from ingredients to techniques and presentation.

  • You’re fluent in Dutch or English (both is a plus).

  • You communicate clearly and confidently - whether it’s with your team, on paper, or under pressure.

  • You’re just as comfortable creating a menu as you are managing food costs, budgets, and staff schedules.

  • You’re a strong, steady leader - and you know how to build a team and a kitchen from the ground up.

  • You’re always pushing to improve and refine your skills.

  • You’re flexible - evenings, weekends, and holidays come with the territory, and you’re cool with that.

  • You can work independently and make smart decisions without needing constant direction.
